Coconut Cookies

This weekend I had a ton of cooking to do for various events, whether it be the HOA belated holiday party, Bears game, or monthly book gang meeting.  In my panic, I immediately opted to all of my strong Mexican dishes, but still wanted to attempt the Achilles heel of all Top Chef contestants, dessert.  For these high stress (and also ultra lazy occasions) I have one simple cookie recipe that I can complete in 20 minutes, and it's made with three ingredients that are all in the pantry.

A heaping cup of sweetened coconut flakes, a tablespoon of [melted] butter, and a beaten egg are all it takes to make a batch of some of the most decadent cookies.  Mix all of the ingredients together in a bowl, then form cookies on a lined baking sheet.

Place the cookies in an oven pre-heated to 350 Dg for 12-15 minutes.  Once the cookies have lightly browned, pull them out to cool.  They're delicious warm or at room temperature; but more importantly they're always fast to make.

So, I have to buy coconut next time I am shopping, because these seem wonderful for coconut lover like me. Have you tried them with unsweetened coconut? Also, if memory serves me, you served them with gelato or booze before. What flavor? Are those the same cookies? Way to stick with NY resolution!

This is the lazy method. If you buy unsweetened, you have to make a sugar-egg custard, which takes an extra 30 seconds. Goes great with lemon sorbet (and ginger liquor), or even mango.

I like quick recipes. My daughter and I were able to cook and taste them, almost before our attention was diverted to the tv.
