Red Redemption

Last time, I made lamb neck rillettes that I tried to model after merguez sausage.  While the product was good, it wasn't as I intended it to be, oozing red goodness.  In hindsight, folding in harissa would have been a good idea, but I've been too eager to try my next idea, which is chorizo rillettes.  It sounds scary, but I really want to make a red, eye-catching product of infinite desirableness.

To achieve the color, I decided to develop the same kind of chile paste that is used for fresh, Mexican chorizo sausage.  Don't let the dried chiles be intimidating, they're already dead.

Ending On A High Note

After the latest night of the week, I wake up the earliest- good hour before my alarm.  I'm alert, ready to go and conquer the final day of my trial.  Today is the fifth and final day of survival.

Noonish rolls around and it's time to eat.  Out of turkey- almost anything I eat is going to have to be prepared.  I saute the rest of the chicken bought to make soup, make a warm peanut butter and honey sandwich, and have the final spoonful of hummus.  Not the most grand meal, but it gets me by on a cold winter day.

I already know what's on the menu tonight.  The most soul-satisfying, fatty, delicious dish of the week- chorizo fried [brown] rice.  There isn't much that's healthier than brown rice either, so i'll be feeling really good after the meal as well.

Mac and Cheese Submission

A couple weeks ago I was given the proposition to guest star on another foodie's site.  After e-mailing back and forth, the idea of a cook-off came out.  Since it isn't possible to compare fish to cake, mac and cheese was selected to be the theme.  Contest rules can be found here.  I'll post the official voting link later, so be sure to come back and help me obliterate the competition!

I honestly don't remember the last time I had mac and cheese.  I watched someone else eat it awhile ago, does that count?  To the best of my knowledge, mac and cheese involves noodles, cheese sauce, and possibly an egg in the event of baking.  I know how to boil water and make noodles.  Know how to make cheese sauce.  Good start.
